Sugar Free Iced Coffee

Everything you need to make this drink
No Sugar Iced Coffee Drink


I found the original recipe on Pinterest and it really peaked my interest. As a diabetic, places like Starbucks are not really on my radar anymore due the high sugar content of their drinks. This one though is right up my alley and it is tasty. I had to make a few tweaks to the original recipe because I am without a coffee maker at the moment. Basically anyone off the street can make this. Here is the recipe:

1 cup of instant coffee
1 tbsp of Sugar Free Coffee Mate in French Vanilla
2 tsp of Jello Sugar Free, Fat Free Vanilla Pudding
1/8 cup of unsweetened Vanilla Almond Milk
1 sm pkg of Truvia (optional)

Blend them all together and pour over ice.

35 Calories, 0 Sugar, 3 Carbs, 0 Fat, 0 Fiber

Coconut Smoothie

Coconut Smoothie

As a diabetic, I'm always looking for something sweet which won't throw me into a coma. Most smoothies have too much sugar in them for me to have. I came up with this smoothie which is refreshing and low sugar. It also is high in protein and low carb.

To Make :

1 scoop of Vanilla Whey Protein Powder. (I used Intex Protein Evolution-low sugar, carbs and high in protein)

10-12 Ice Cubes

1 cup of Unsweetened Coconut Milk

1 small pkg of Stevia (Optional)

                                                                1 tsp of shredded Coconut (Optional)

210 Calories, 5 fats (from the Coconut Milk), 3 Carbs, 1 Fiber,  (2 Total Carbs), 1 Sugar and 35 grams of Protein. (This count is without the adding in the tsp of shredded coconut or Stevia)

Coffee Ice Cream-Heath Bar Pie

This is the easiest pie to make!

You will need:     1 Pre-made Oreo cookie pie crust
                           1  1/2 gallon of Coffee Ice Cream
                           1 Package of Heath Bar Miniatures
                           1 Bottle of Hershey's Chocolate Syrup
                           1 Bottle of Caramel Sauce
                           1 Can of Ready Whip
                           1 Can of Ready Whip in Caramel


 1) Take and crush all the Heath bars into small bite size pieces. Set aside about 1/4 cup for topping later.
 2) In a bowl, fold the rest of the Heath bar pieces into the ice cream. Make sure ice cream is soft enough.
 3) Pour a layer of the Chocolate Sauce and Caramel Sauce into the bottom of the pie shell.
4) Scoop in the ice cream mixture
5) Pour another layer of the Chocolate and Caramel sauce on top of the ice cream.
6) Spay a layer of the Ready Whip and Caramel Ready Whip on top of the pie. Alternate as you go. (See Photo)
7) Drizzle Chocolate Sauce on top of the Ready Whip.
8) Sprinkle remaining Heath Bars pieces across the top of the pie.
9) Put pie into freezer for 1 hour.
10) Ready to eat!
